Margarita Pizza on Cauliflower Crust

Margarita Pizza on Cauliflower Crust
295 calories each (makes 6)

Ingredients for crust
1 Large head of cauliflower
2 Large eggs
2 Cups shredded mozzarella cheese
1 tsp dried oregano
2 tbs garlic powder

Ingredients for toppings
1 Cup shredded mozzarella
1 Cup tomato sauce
24 (approximately) Fresh basil leaves
2 Large tomatoes
6 tbs shredded parmesan cheese 

STEP 1
To begin, chop the cauliflower into small sections and bite-size pieces, 
disposing of the stock and leaves. Place the chopped cauliflower in your food processor.
Using the chopping blade, shred the cauliflower into crumbles. 

STEP 2
In a large microwave safe bowl, mix the crumbles of cauliflower with the eggs, mozzarella, 
oregano and garlic powder until oregano looks equally distributed. 
Cook mixture in the microwave for 8 minutes, then allow to cool 10 minutes

STEP 3
After crust ingredients are mixed, scoop 1/2 cup and drop onto wax paper. 


STEP 4
Use a large or mixing spoon to pat down the mix into a thin, round "crust".
You may want to make the edges a bit thicker than the center, 
to keep them from browning too much. 

STEP 5
 Next sprinkle corn meal over lightly greased sheet, 
then flip the "crust" onto the sheet- with the wax paper on top.
Carefully pull the wax paper off of the "crust" and repeat process.  

STEP 6
Cook at 425F for 15-20 minutes
Depending how thick your crust is, baking may take longer.

STEP 7
When crust bakes to desired crispness - carefully remove sheet, to heat-safe location.
Add 2 tbs of tomato sauce to each crust, covering whole surface.
Next add 1/4 cup of  mozzarella, 3-4 basil leaves, 1 tbs and sliced tomato.


STEP 8
Return to oven (425F) and bake about 5 minutes longer.
When the 5 minutes is up, remove pizzas from oven
and let cool about 5 minutes before serving
